Little Willies Avocado Brunch Mash Up

Who doesn't love brunch - answer? Noone!!! Everyone loves brunch! What better way to ease your way into the day than with our Little Willies and avocado friends...

INGREDIENTS

  • 1 pack The Vegetarian Butcher Little Willies
  • 1 slice sourdough bread
  • half avocado
  • 50 gram cherry tomatoes
  • 50 gram chestnut mushrooms
  • black pepper

Preparation

Method

  1. Stone the avocados, scoop out the flesh and mash in bowl with fork. Season with black pepper.

  2. In a pan add 1 tsp vegetable oil and saute Little Willies for 5 minutes till golden.

  3. Remove and keep warm.

  4. Add mushrooms to same pan and saute for 2 minutes

  5. Brush tomatoes with oil and Grill till they heat through and get a little colour

  6. toast slices of sourdough.

Assemble

  1. spread avocado onto sourdough toast, top with grilled tomatoes mushrooms and Sliced little willies. Add a grind of black pepper.

  2. Enjoy..
