Mexi-hen Fiesta BBQ Skewers

Colourful skewers perfect to pop on the BBQ using our Mexi-hen Fiesta chunks.

  • 2 packs Mexi-hen Fiesta
  • 1 large onion diced
  • 1 yellow pepper diced
  • 1 red pepper diced
  • 1 green pepper diced
  • 2 tablespoons olive oil
  • 2 ripe tomatoes
  • 1/2 red onion finely diced
  • 1 mint chopped
  • 1/2 coriander chopped
  • 200 grams brown rice
  • 400 millilitres vegetable stock
  • 100 grams kidney beans
  • 1 lime quartered


  1. Thread the Mexi-hen onto skewers interspersed with onion and mixed peppers. Brush with olive oil.

  2. Make up the pico de gallo by mixing tomatoes, red onion, 1/2 coriander, mint and half the olive oil.

  3. Rinse the rice well and simmer in lidded pan with vegtable stock and bay leaf for 20 minuts or until cooked.

  4. Grill the Mexi-hen Skewers for 10-12 minutes. Turning once.

  5. Serve on rice with rest of coriander, pico de gallo and a wedge of lime.
