Mexi-hen Fiesta Fajitas

Delicious, fully-loaded fajitas using our Mexihen chunks.

INGREDIENTS

  • 2 packs Mexi-hen Fiesta
  • 8 wrap
  • 1 red onion sliced
  • 1 red pepper
  • 1 green pepper
  • 1 tablespoon olive oil
  • 1/2 vegan sour cream
  • 1 avocado
  • 200 grams frozen corn
  • 400 grams crispy onions
  • 100 grams
  • 200 grams salsa
  • 1 lime

Preparation

  1. In a large pan sauté Mexi-hen as per instructions and add onions and peppers with olive oil for 3 minutes till soft.

  2. meanwhile make up your side.

  3. Elote - Saute corn for 3 minutes with smoked paprika fold in vegan cream cheese, spring onions and coriander.

  4. Guacamole - mash up the avocado and add salt, pepper and mint.

  5. Salsa - mix with lime zest for extra edge.

  6. Serve with warm tortillas.

  7. Tuck in and enjoy!
