INGREDIENTS
- 2 The Vegetarian Butcher frozen chicken burger
- 2 burger buns
- 1 red pepper
- 1 orange pepper
- 2 tbsp sweetcorn
- 1/2 red onion finely sliced
- 1/2 beef tomato sliced
- 1 tsp corriander
- 1 tsp mint
- 2 tsp olive oil
- 1/2 tsp fajita spice mix
Preparation

for the salsa pan fry the onion in a pan with a tsp of olive oil and fajita spice over low heat for 10 minutes till it caramelises.

Mix this with the sweet corn, mint, coriander.

Cut the peppers into quarters and remove the seeds, rub in olive oil and place on oven tray
-
Bake the Happy go clucky burgers on same tray as peppers. In the oven at 185c for 10 minutes.

Toast your buns and load with beef tomato, Happy go Clucky Burger, roast peppers and corn salsa
