Mexican What The Cluck Pasta Bake

INGREDIENTS

  • 1 pack The Vegetarian Butcher What the Cluck
  • 150 grams penne pasta
  • 30 ml olive oil
  • 0.5 red onion finely sliced
  • 2 cloves garlic finely chopped
  • 1 tsp chipotle paste
  • 30 grams plain flour
  • 2 tbsp juice of jalapeño
  • 300 ml oat milk
  • 60 grams smoked vegan cheese
  • 40 grams baby spinach
  • handful nacho potato crisp
  • 2 tsp sliced green jalapeno

Preparation

  • For pasta sauce: In a large pan fry the red onion, garlic in olive oil and chipotle paste. Add the flour to make a roux.

  • slowly add the oat milk in stages, finish with half the vegan smoked cheese and jalapeno juice. Blitz till smooth. Season to taste.

  • Mix the cooked penne pasta with baby spinach through the sauce. Place into a baking dish.

  • Toss the What the Cluck in 1/2 tsp chipotle paste. Layer on top of the pasta.

  • Bake in oven at 175c for 15 minutes.

  • Top with some crushed nacho crisps jalapeno and rest of cheese and bake for 3 minutes till cheese melts.
