Happy Go Clucky Vegan Caesar Salad

A chicken vegan Caesar salad recipe with a delicious plant-based chicken burger that brings crunchy and smooth together in one tasty mouthful.

  • 1 pack The Vegetarian Butcher crispy chicken style burger
  • 150 grams romaine lettuce
  • 1 tbsp Hellmann's® Vegan mayo
  • 1/2 tsp American mustard
  • 1/4 lemon squeezed
  • 50 grams vegan Parmesan shavings
  • 1/4 ciabatta roll cut into bite-sized pieces
  • 40 grams radish finely sliced
  • 5 grams parsley finely chopped

Preparation

  1. Shred the lettuce wash in a colander under cold running water.

  2. Mix the mayonnaise, mustard, lemon juice and half of the vegan parmesan cheese and blitz with a hand blender to a smooth dressing. Season with pepper.

  3. Bake the Happy go clucky burgers in a preheated oven for 10 minutes at 185c. Along with the croutons seasoned with black pepper

  4. Cut the burger into strips. Mix the dressing in a bowl with the lettuce and the radish slices.

  5. Finish the salad with the ciabatta croutons, crispy burger strips, the rest of the vegan parmesan cheese and the parsley.
