Mexican What The Cluck Pasta Bake

Ingredients
- 1 pack The Vegetarian Butcher What the Cluck
- 150 grams penne pasta
- 30 ml olive oil
- 0.5 red onion finely sliced
- 2 cloves garlic finely chopped
- 1 tsp chipotle paste
- 30 grams plain flour
- 2 tbsp juice of jalapeño
- 300 ml oat milk
- 60 grams smoked vegan cheese
- 40 grams baby spinach
- handful nacho potato crisp
- 2 tsp sliced green jalapeno
Preparation

For pasta sauce: In a large pan fry the red onion, garlic in olive oil and chipotle paste. Add the flour to make a roux.

slowly add the oat milk in stages, finish with half the vegan smoked cheese and jalapeno juice. Blitz till smooth. Season to taste.

Mix the cooked penne pasta with baby spinach through the sauce. Place into a baking dish.

Toss the What the Cluck in 1/2 tsp chipotle paste. Layer on top of the pasta.

Bake in oven at 175c for 15 minutes.

Top with some crushed nacho crisps jalapeno and rest of cheese and bake for 3 minutes till cheese melts.
